Whipped Rutabagas

Boiled rutabagas whip up nicely, because of their high fiber and starch content (which also makes them great for soup. And with their rich, earthy flavor—accented by nutmeg—whipped rutabagas are a wonderful fall and winter vegetable, especially on a plate with braised meats, such as beef ribs or lamb shanks, or roast pork or duck.

You can do the whipping by hand, but an electric mixer makes the task much easier. Even with a machine, though, rutabagas will never get completely smooth and light. They’ll always have few lumps and a satisfying thickness. (Don’t try this recipe with regular white turnips—they soak up too much water when boiled.)
